It is stone milled weekly and sifted through a larger screen, giving it a hearty texture and grainy body ideal for whole grain baking.

With a warm grain brown colour and nutty depth, this flour delivers rustic flavour and robust structure. Expect notes of pizza crust, toasted oats, and walnut—perfect for bakers seeking complexity and nutrition in every bite. Its high protein content (approx. 13.5%) ensures excellent gluten development, while still retaining the earthy characteristics of whole wheat.

The coarser grind makes it ideal for recipes that benefit from fuller flavour and structure. For sourdough loaves, a longer autolyse can help soften the bran, or combine with “Daily Bread” flour for added lightness.
